Spicy Spinach Parmesan Soup

Here's another delicious soup recipe.  The inspiration for this recipe came from the Pioneer Woman's website, but I've altered it for taste and to be more health conscious.  It's delicious.

Ingredients:

10 oz. spinach
1/2 medium onion, diced
2 garlic cloves, finely diced
2 tablespoons olive oil, divided
4 cups chicken broth
1/2 teaspoon cayenne pepper
1 parmesan cheese rind
2 oz. grated parmesan cheese
4 tablespoons sour cream 

Wilt the spinach in a tablespoon of olive oil, then puree it in a blender or food processor with a cup of chicken broth.

In a stock pot, saute the onion and garlic in a tablespoon of olive oil.  When the onions are translucent, add the remaining chicken broth, pepper, and cheese rind.  Cook for 15-20 minutes.

Remove the cheese rind and add the spinach mixture.  Cook for an additional 5-10 minutes.

Serve with grated cheese and a tablespoon of sour cream.
