Based on the advice of the local weathermen, we planned on being snowed in today and tomorrow, which, of course, means dessert consumption. This week we chose chocolate pie as our sugar victim. It's another of those classic family recipes that is always fabulous. Enjoy!
Pie Filling Ingredients:
6 tablespoons flour
1 cup sugar
1/3 cup cocoa powder
3 egg yolks (save whites for meringue)
2-1/2 cups milk
1 tablespoon margarine
1 teaspoon vanilla extract
1 pie crust, cooked
Meringue Ingredients:
3 egg whites
1/8 teaspoon cream of tartar
6 tablespoons sugar
Begin the pie filling by sifting together the flour, sugar, and cocoa. Mix the milk and egg yolks in a medium sauce pan, then add the dry ingredients. Cook over medium heat, stirring continually until thick. Stir in the margarine and vanilla and pour the mixture into the pie shell.
To prepare the meringue, combine the egg whites and cream of tartar in a mixing bowl. Using a hand mixer, beat the mixture until stiff. Add sugar slowly and beat until stiff peaks form. Spoon meringue onto the top of the pie.
Bake at 375-degrees until the meringue begins to brown.
